Homemade Pecan Nut Butter... Mmmm
I'm a bit of a nut butter freak, if i do say so myself! I add it to my yogurt bowls, i slather it on dark chocolate, eat it on apples and sometimes i just eat it with a spoon. Its delicious! However, it can be very costly in the supermarkets and some companies can charge up to $15 dollars for a small jar, which is absolutely extortionate! I decided to take it upon myself to make my own, and i couldn't believe how simple it was once I started.
Before I give you the super-simple recipe, I just want to inform you of the super health benefits of pecans.
Health Benefits of Pecans:
1. improves digestion! Pecans are full of fiber, they help promote colon health and help facilitate regular bowel movements.
2. They are rich in B vitamins such as riboflavin, thiamin, niacin, B-6 and folates which help to increase metabolism, in turn, helping with weight loss.
3. They have anti-inflammatory benefits as they are rich in magnesium.
4. Pecans are a excellent source of vitamin A and vitamin E, both great for skin health! Vitamin A helps to fight off free radicals, and keeps aging skin at bay! Vitamin E helps to smooth out the skin, keeping it elasticated and healthy.
Finally, pecans are a good source of iron, which promotes good protein structures in the skin hair and nails, providing us with strong, luscious hair, strong nails, and healthy skin.
4 cups raw pecans
1 tbsp extra-virgin coconut oil
Put pecans into a frying pan and lightly toast them for around 7 minutes (making sure they don't burn!)
Put pecans into a food processor and process them until they are mushed up and starting to blend into a paste
Add 1 TBSP of extra-virgin coconut oil and blend for a further 1 minute.
Take out, and scrape all remaining nut butter into a mason jar.
Keep out in room temperature for a runnier nut butter, store in fridge for a "spread" like nut butter.
